A Wave of Gratefulness

It hit me like a wave in the grocery store this week, a feeling over of overwhelming gratitude that brought tears to my eyes.  It began when the checker in the next lane over said to her customer, "Do you want to donate $1 to the Food Bank?"

My flashback began.

I remember well the first time that question really meant something to me, something more than my customary, thoughtless, "No thanks," as though I was turning down a favor for myself.  It was one year ago this week when I was asked that question in that very same grocery store.  For the first time in my life, I understood what it felt like to need food from the Food Bank.  I was shopping that day with Food Stamps.  Me, the girl who had never known poverty in her life, was shopping with Food Stamps.

I could tell you to the dollar how much food was in my cart.  I had to know.

You see, my husband had lost his job in January of that year (2010), and we had struggled all year to make ends meet on Unemployment wages. It was a year of high expenses and low income, and the savings account was getting frighteningly low with the bottom in sight.  Then I lost my at-home medical transcription account in October.  November was the first month we met the poverty line for Food Stamps.

During this time, I went shopping with my sister, and I remember telling her that I could really understand why many people feel desperate in life. The stores are filled with shiny, colorful, fun things, and many people do not have the money to buy them.  I felt desperate, too.  Everything I looked at, except the absolute necessities, was a no.  And sometimes even the absolute necessities were a no. Even the Goodwill and Value Village seemed very expensive from my new vantage point.

We were on Food Stamps for only two months.  We were very thankful for them while we needed them but are even more thankful to not need them.  My husband was offered a job in January 2011 after 49 weeks of unemployment.  I have not pursued work in the medical transcription field but spend the "extra" time that I have with my kids and quilting.

So this week as I shopped with a carefree attitude, tossing things in the cart ... five boxes of Breyer's ice cream, two large hams ... I was grateful to be stopped short at the register by those words again, "Do you want to donate $1 to the Food Bank?"

A resounding YES, with a compassionate, thankful heart, I would love to.  I would absolutely love to donate because I am grateful to the core of my being to have something to share because the Lord has richly blessed us and kept us.

Recipe: Bacon Hashbrown Bake

A tasty alternative to pan-fried hashbrowns!


BACON HASH BROWN BAKE:

4 c grated cooked potatoes
12 bacon strips, cooked and crumbled
1/2 c milk
1/3 c chopped onion (I used 1/6 c dried minced)
1/2 t salt
1/4 t pepper
1/4 t garlic powder
1 T butter, melted
1/2 t paprika

Combine first 7 ingredients.  Put in greased 9-in pie plate.  Drizzle with butter and sprinkle with paprika.  Bake at 350 for 35-45 min until lightly browned. 

Yield:  6-8 servings

Note:  I left the bacon out, and it was lower fat but still yummy!

A Gift From My Sister

Recipe: Ham and Cheese Omelet Roll

HAM AND CHEESE OMELET ROLL:

4 oz cream cheese, softened
3/4 c milk
2 T flour
1/4 t salt
12 eggs
2 T Dijon mustard
2-1/4 c shredded cheddar or Swiss cheese or a mix of both, divided
2 c finely chopped fully cooked ham
1/2 c thinly sliced green onions, optional

Line the bottom and sides of a greased 15x10x1" baking pan with parchment paper.  In a large bowl, beat cream cheese and milk until smooth.  Add flour and salt, beat again.  Add eggs and beat again.  Pour into pan.  Bake 375 for 30-35 min or until eggs are puffed and set.  Remove from the oven.  Immediately spread with mustard and 1 c cheese, ham, onions, and 1 c cheese.  Roll up from short side, peeling paper away while rolling.  Sprinkle top of roll with remaining cheese.  Bake 3-4 min longer or until cheese is melted.  Just make sure the ham is hot which doesn't take too long surrounded by the hot egg omelet. 

Yield:  The recipe says 12 servings, but not at my house, no way!  It really serves 6-8.

Note:  I made this once without the Dijon mustard, and it wasn't nearly as good as with it.  Even though Dijon is not my favorite, it really is the finishing touch to the omelet.

Laundry Room Curtain

Wow, it has been almost two years since Mr. Hearts installed the cabinets in the laundry room.  You can read about the project here.  Here are some new pictures because just today I made the curtain to hide the bins above the washer.  The bins hold out-of-season decorations, and Millie got into the boxes today to set out our winter decorations.

This is a picture taken today before the curtain was hung.  Come on in and feel at home - I didn't bother to clean up for you!

New deep red and cream flannel checkered curtain.  It matches the floor, which you can see in the last pics below.

I did clean up a little for this picture.  I am still amazed at how the cabinets fit the room almost perfectly with very little adjustment.  You can read in this post about these $250 cabinets we got off of Craigslist - after getting quotes from $10,000 to $17,000 for custom cabinets.  I love my old cabinets; they were the very same old-fashioned style I was asking the cabinetmakers to build, painted creamy yellow and all. 

And I am still loving this rolling laundry basket.  I bought it first and then had Mr. Hearts figure out a place for it.  It fits perfectly underneath the counter on which my grain mill sits.  The counter had to be lower so the grain mill would fit under the wall cabinet above.  The idea of this rolling laundry basket was that it would easily roll out the back door {just to the left} to carry wet laundry to the clothesline.  I found out that the rolling cart does not hang clothes on the line by iteself, imagine that!  This past summer the sun was a rare sight here, at least on days I did laundry, and when the sun came this fall, it was too cold to dry clothes in a timely manner.  But I still really like the basket and having an open wire basket where damp clothes / rags don't mold if they don't get laundered right away like they always did in a closed plastic bin, and I use the top valet bar for hanging clothes out of the dryer.

These two pics show the other side of the room.  Coat hooks, shelves, and cabinets galore!  Mr. Hearts planned it out well!
